Sometimes I have no clue what to make for breakfast. Some love eggs, others don't. But I like when we eat a good breakfast. The menu varies: cooked oatmeal, baked oatmeal, eggs and toast, bagels, cereal, bacon, pancakes, creamed eggs and biscuits, or sausage and biscuits.
I don't know what inspired me for this morning's breakfast, but it was a different one. I spotted the sorghum molasses and realized I've never tried using it. We had bought it last year at the Old Timey Days. I thought of my healthy Cooking With Wisdom cookbook. Sure enough, they had a recipe for baked oatmeal using sorghum molasses.
Recipe:
3 c. oatmeal
½ c. sorghum
2 t. baking powder
1 ½ t. cinnamon
1 t. salt
1 c. rice milk or water - I used 1 c. milk
2 eggs, beaten
½ c. oil or melted butter
Mix all ingredients together. This looked so rich and brown, different than the normal lighter color.
Spoon into greased 9" baking dish.
I am really into cast iron skillets. I use them e.v.e.r.y. day!!!! From stovetop to oven to making pizzas, these are the best cookware to use! Everything gets better using them.
Bake at 350° for 40-45 minutes.
Serve warm with frozen blueberries, canned fruit or milk. Delicious!
And it was very tasty. The children like eating their baked oatmeal with milk, but I always prefer mine without. Last year I canned apples that turned out to be a bit too mushy. But I love the idea. I opened a jar, put them in a baking dish, sprinkled it with cinnamon, and popped it in the oven for just a few minutes just to warm them. Then I served it like this. And my, my, my was it tasty! I love trying new stuff. Some of the others are snooty or reserved about trying to like new things. ☺

This evening we went to Bible Study then a birthday party after that.
This trio are best of chums, according to my boys. They love their J.
And this was the birthday man.
I didn't capture the cake with camera, but I still have it in my mind. T just started a new business of excuvating, so the cake had a toy dozer scooping 'dirt'. Very creative. And the little ones couldn't stay away from that icing!
Landon loved all the dress up clothes...
